So what is an acceptable temperature difference from one spot on a motor to the next?  

I hit my intake manifold with an IR temp meter today and the drivers side front and rear of the manifold was around 155* and the middle was around 215*.  60* difference seems bad to me but just trying to confirm.  Pretty sure there's a blockage there.  Any advice????

It depends on where the water passages are. There isn't water in the whole manifold so it will differ from spot to spot. The main area to check is the exhaust manifold at each port to make sure each cylinder is fairly close to insure you are running for MAX performance. Also to check for good water flow check each head front and rear to see how even they are. If you are worried about the intake you can always test a follow FSJ owners motor.

OK so I checked the temp on the heads and there was no hot spots on either side.  The drivers side exhaust manifold was about 80 degrees hotter in the middle than the rest of the manifold.  Not sure what that means???  Not sure what else to look for on this overheating issue.  I'm at my wits end here!!!

The 80 degree diffenece may be because there are usually 2 exhaust ports in the center of the manifold. 2c

yeah thats what I thought at first but the passenger side manifold was even all the way across and its the same design in the middle.
